An old appliance disconnect and removal clears the way for the new unit without leaving a hazard behind. It begins with the shutoffs: the breaker for anything hard-wired or on a heavy circuit, the water valve for anything that fills, and the gas valve for anything that burns. Each is closed and tested before a connection is loosened. A gas connector is removed and the valve outlet capped if the new appliance is not going on the same day, and the capped valve is leak-tested.
